Poor onto hot greased pan. Add cheese about 30 seconds before removing from the pan. Serve with side of catsup Lunch: Tuna in a tortilla Recipe Source: Brain Foods for Kids Over 100 Recipes to Boost Your Child's Intelligence Written by Nicola Graimes ½ cup canned tuna, drained 1 large soft tortilla (2 for my version) 1/4 cup grated sharp cheese 1 tomato, sliced Mash drained tuna with a fork and arrange it in the center of the tortilla. Top with grated cheese and sliced tomatoes. Roll up the tortilla to enclose the filling. Heat a dry nonstick frying pan over medium heat. Place the tortilla seam side down in the pan and cook for 3 minutes. Cut diagonally and serve. My version: Make it like a casadia. Lay tortilla flat on a greased and/or nonstick pan. Spread out the tuna and sprinkle with cheese. Lay second tortilla on top and cook until light brown. Flip and cook continue to cook until both sides are golden brown and cheese is melted.
