Breakfast: Getting ride of excess baby food

Lunch: Meat balls with a veggie secret

SOUPERIOR MEAT LOAF
1 envelope Lipton® Recipe Secrets® Onion Soup Mix
2 lbs. ground beef
3/4 cup plain dry bread crumbs*
2 eggs
3/4 cup water
1/3 cup ketchup
1 Package Frozen spinach

For Meat Loaf from Lipton
1. Preheat oven to 350�. In large bowl, combine all ingredients.
2. In 13 x 9-inch baking or roasting pan, shape into loaf.
3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving.
*Substitution: Use 1-1/2 cups fresh bread crumbs or 5 slices fresh bread, cubed.

Slow Cooker Method for Meat Loaf from Lipton: In slow cooker, arrange meat loaf. Cook covered on LOW 6 to 8 hours or HIGH 4 hours. (HELPFUL HINT...Place meat loaf on a piece of cheesecloth, then on a rack to help hold meat loaf together while lifting in and out of slow cooker.)

My method for meat balls:
Mix all ingredients. Form into meat balls and place on a greased and or foiled pan. Cook at 350 for 35-40 minutes. Check with a meat thermometer to be sure the temp has reached 160 F. Freeze leftovers.

Dinner: Chicken Salad with Grandmas Dressing

2 cups Buttermilk
2 cups mayonnaise
1 Tablespoon powdered garlic or Garli Garni from Garlic festival
Pepper to taste
1 Tablespoon Ranch dressing mix (optional)
Random spices from my spice cabinet - Basil is good, so are many multi spice mixes like Mrs. Dash

Salad ingredients:
Chicken pieces
Romaine lettuce About 1 head per adult
Green onions, Chopped
Cucumber
random veggie from the frig that need to be used up

Breakfast: �Lost� Scrambled eggs and catsup

2 eggs
A splash of milk (about a tablespoon but I never measure it)
Catsup
1 stick cheese, cubed (optional)

Mix together eggs and milk. Poor onto hot greased pan. Add cheese about 30 seconds before removing from the pan. Serve with side of catsup

Lunch: Tuna in a tortilla

½ cup canned tuna, drained
1 large soft tortilla (2 for my version)
1/4 cup grated sharp cheese
1 tomato, sliced

Mash drained tuna with a fork and arrange it in the center of the tortilla. Top with grated cheese and sliced tomatoes. Roll up the tortilla to enclose the filling. Heat a dry nonstick frying pan over medium heat. Place the tortilla seam side down in the pan and cook for 3 minutes. Cut diagonally and serve.

My version: Make it like a casadia. Lay tortilla flat on a greased and/or  nonstick pan. Spread out the tuna and sprinkle with cheese. Lay second tortilla on top and cook until light brown. Flip and cook continue to cook until both sides are golden brown and cheese is melted.

What do you do when the baby won�t take a bottle?

Dinner: Garlic Chicken and Sunshine Carrots
Garlic Chicken

1 Chicken
½ to 1 cube of butter
Garlic seasoning of your choice. My choice is 1 TBSP.  Lemon Garli Garni  From the  http://www.garlicfestival.com/


Preheat oven to 400 F
Soften the butter
Mix in seasoning
Put in the freezer and mix every few minutes until it�s firm but moldable
Without breaking the skin, Separate the skin far up on the breast and into the drumsticks as possible
Stuff the seasoned butter under the skin about a tablespoon at a time. Press the butter up the breast and into the drumstick.         
Put chicken into a baking dish an into the oven
After 5 minutes turn oven down to 350 and cook for another 55 minutes.
It�s done when skin is golden brown and drumstick is flexible.


Rise-a-roni (Optional) http://www.ricearoni.com/   Just follow directions on the box.

Sunshine Carrots

4 Medium carrots. Pealed and cut diagonally into 1 inch thick slices. (I use baby carrots instead)
1 tsp Granulated sugar
½ tsp corn starch
1/8 tsp salt
1/8 tsp ground ginger
Orange juice
2 tbsp orange juice
1 tsp butter or margarine

In a saucepan cook carrots in boiling water for 10 minutes or until tender. Drain
Meanwhile, in a small saucepan, combine sugar, cornstarch, salt and ginger. Add orange juice and cook, stirring constantly, until mixture thickens. Boil for 1 minute. Stir in butter, pour over carrots; toss evenly to coat.
